EINKORN BLUEBERRY STREUSEL MUFFIN RECIPE
INGREDIENTS
FOR THE MUFFINS:
1 ½ cups (260g) blueberries, fresh or frozen
2 ½ cups (300 g) Jovial All-Purpose Einkorn Flour, or 3 cups (288g) Jovial Whole Grain Einkorn Flour plus more to coat the blueberries
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon kosher salt
6 tablespoons (84g) unsalted butter, melted and cooled
2 large eggs
½ cup (100g) sugar
1 cup (220g) buttermilk
1 teaspoon vanilla extract
1 teaspoon lemon zest
FOR THE STREUSEL TOPPING:
½ cup (33g) rolled oats Â
¼ cup (30g) Jovial All-Purpose Einkorn Flour or ¼ cup (24g) Jovial Whole Grain Einkorn Flour
¼ cup (50g) brown sugar
2 tablespoons unsalted butter, cut into small cubes
